It's a type of sea creature (an echinoderm?). Not an uncommon item in Korean and Chinese seafood cuisine. If I'm remembering correctly, it vomits up its stomach (as a peculiar defense mechanism) when threatened by a predator.

I try to avoid eating sea cucumber. The taste is okay, but it's too jiggly.
