Humans can fight back a crab for a few seconds.
Evidence: Half Life 2: Chapter 3 - You see a human trying to get a headcrab off him and ultimately failing.
Xenomorph exoskeleton is apparently way tougher than human skin (and possibly bone) and thus the xenomorph might actually have a chance wacking a headcrab off.

Nope, the headcrabs eat away at parts of the victims brain, motor functions and such are then directly controlled by the crab. Higher brain functions such as thought and personality still exist, at least partially (the scream when you burn a zombie is definately human).
The body then undergoes a mutation (virus implanted by the crab?) that causes the digits of the victim to grow to large claws, and to create a mouth-like structure on the abdomen of the host.
The fast zombie removes the skin of the victim, presumably to allow for better flexibility. The poison zombie is severely defrormed with large humps and such to allow poison headcrabs to latch on.
The human is alive in all versions. The sounds created are from a (however disfigured and modified) human larynx.

Yah. So... wheres a xenos brain at anyway? doesnt it stretch along the skull a bit? I dont know.
Also, how would the headhumper survive the acidity of the aliens blood?
