I figured it was a topic worth having, given all the movie threads so far. Feel free to extend the title to include overall scores and songs not used as the main theme.
In no particular order, my favorites:
Back to the Future
Star Wars
Indiana Jones
Ghostbusters
Top Gun (Highway to the Danger Zone was a cool song, I don't care what you say)
Beverly Hills Cop
Batman (the Danny Elfman theme)
Superman
Any other theme by John Williams
A few other themes each by Alan Silvestri (like Predator) and Danny Elfman (like Spider-Man)
The Incredibles, in my opinion, had a very well-written score. I'm sure I'll think of others somewhere along the way, but I think that's enough for now. _________________ Grrrr...RAAAAARRRGHHH!!!

Anything (except the Harry Potter scores) by John Williams.
Anything by Danny Elfman.
Alan Silvestri - The Abyss
James Horner - Aliens
Graeme Revell (sp) - The Crow
Blade Runner
David Arnold - Independence Day
Herrmann - Psycho
Other (non-score) soundtracks:
The Matrix
Strange Days
Good Morning Vietnam
Swing Kids (also score - James Horner)
Stand By Me
The Crow

These are some of my favorites, too, especially The Crow.

From a movie in progress, the Halo Scores were quite well done and actually quite relaxing (which is contradicting the fact that the universe is about to end). And another lesser known movie in progress, Baldurs Gate. If they use the music from the game then I'll be just fine. Have you ever heard the scores from BG2 and BG2:TOB? Absolutely Amazing. _________________

Seriously atmospheric music... the game experience would have been somewhat lessened without music of that calibre.

My favorite movie theme is Boy meets Girl under a Silvery Moon, which then explodes for No Apparent Reason. _________________

Battle Of The Heroes from SW3:RoTS
Most any LoTR music.
The GodFather opening theme is quite cool, as well as the wedding music played at Michael's/Appolonia's wedding. _________________
